Preheat oven to 415 degrees F (220 degrees C). Grease 8 muffin cups.
In a large bowl, mix the shortening, sugar, and hot water. Allow to cool until lukewarm, and mix in the yeast until dissolved. Mix in the egg, salt, and flour. Allow the dough to rise until doubled in size. (Dough will be really sticky!)
Divide the dough into the prepared muffin cups, and allow to rise again until doubled in size.
Bake for 10 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean.
These are so fast. No kneading required! The flavor is great too. We make this weekly.
I am a collector of recipes. I am constantly finding more recipes to try from blogland, newspapers, cookbooks, magazines...and when I make them, IF I think they are worth making again, I will post them here to my online cookbook!
I like to use ingredients that most people usually use and have available, though I like to experiment with more exotic ingredients on occasion as well.
I really tend to favor the sweet side of food. So you'll find a lot of dessert recipes here.
I am all about trying new recipes. If you've got to make dinner every night, why not mix it up a bit?
